Amaranth is an ancient grain also known as Chinese spinach or callaloo in Caribbean cooking. It is a tall plant with broad leaves that produces thousands of tiny seeds. The seeds have a mild peppery flavour.
HOW TO USE
- Use as a cereal.
- Add to soups, salads or baked goods.
- No soaking required. – Place 1 part amaranth in 2 parts of water. Bring to a boil and simmer without a lid for about 20 min or until tender. Most of the water would be absorbed by this time.
