Often used in pickling & marinating recipes. It's a key ingredient for pickled fish and is used in curry blends of Caribbean origin & even some British desserts & bakery. It has similar characteristics to that of bay. Use whole for pickling or for adding into mince meats & rub blends. Flavour of cloves & cinnamon with a nutmeg undertone.
