Heating whole bulbs of garlic over the course of several weeks, results in sweet and syrupy caramelised black cloves with hints of balsamic vinegar. Black garlic makes rich and complex purées, sauces and flavoured butters. Dice and add directly to pizzas or pastas for a delicious sweetness.
