Hearty Chicken Soup

Ingredients

  • 15 ml olive oil
  • 4 cloves crushed garlic
  • Free range chicken mini breast fillets
  • Mini breast fillets
  • soup mix
  • chicken stock

Cooking Instructions

STEP ONE

  • Heat a large saucepan over medium heat. Add 15 ml olive oil and 4 cloves crushed garlic, and fry gently for a minute.


STEP TWO

  • Add the soup mix and fry for 10 minutes, stirring occasionally until slightly golden and fragrant.

 

STEP THREE

  • Prepare the chicken liquid stock concentrate as per pack instructions and add to soup. Top up with water until vegetables are covered. Season with a pinch of salt and pepper. Simmer over a medium-high heat for 30 – 40 minutes until the veggies are softened.


STEP FOUR

  • Poach chicken in the broth for the last 10 – 15 minutes. Add the chicken breasts to the soup and submerge until covered completely in the liquid. Allow to poach in low simmering broth until cooked through.


STEP FIVE

  • Remove the chicken from the broth and allow to cool, shred and add back into the soup. Season to taste and mix well. Serve with grated hard Italian cheese and stir through a dessert spoon of basil pesto as an optional extra.
