Berry, coconut and almond bars
Ingredients
- 1 lemon, zested and juiced
- 4 tsp corn flour
- 2/3 cups icing sugar
- 4 cups fresh mixed berries (blueberries, raspberries, blackberries, gooseberries, strawberries)
- 1 cup cold coconut oil (the coconut oil should be set, not runny)
- 1 Free-range egg, beaten
- a pinch salt
- 7 1/2 ml baking powder
- 6 tbsp brown sugar
- 2 tbsp desiccated coconut
- 1/2 cup ground almonds
- 1 cup cake flour

Cooking Instructions
- Line a deep square baking tin.
- Mix together flour, almonds, coconut, sugar, baking powder and salt.
- Using your fingers, rub in the coconut oil until the mixture resembles breadcrumbs.
- Mix in the egg then press 2/3 of the dough into the baking tin.
- Mix together the berries, icing sugar, corn flour, lemon juice and zest.
- Scatter onto the pastry.
- Crumble the remaining dough onto the berries.
- Bake for 45 minutes at 180 until golden brown.
- Leave to cool.
- Cut into squares and store in the fridge.
