Pork Belly

Ingredients

  • 3 tbsp coarse salt
  • 2 stalks celery, roughly chopped
  • 1 carrots,roughly chopped
  • 1 large onion, rougly chopped
  • 1.5 kg Pork belly

Cooking Instructions

  1. Pre-heat oven to 230°C or highest setting
  2. Slice skin side of pork belly into diamonds, being careful not to score to deep.
  3. Rub the meat side of the pork with the marinade (not the skin)
  4. Pat dry the pork skin with paper towel until completely dry and rub with coarse salt powder getting into the diamonds.
  5. Place in a large ovenproof dish and into oven for 30-35min until crackling is golden brown.
  6. Remove from oven and drop the temp to 150°C
  7. Place the carrots, onion, celery, garlic & apple under the pork belly.
  8. Add the verjuice and place back into the oven for 2-3 hours until very soft & tender.
  9. Put the grill on for the last 5 min if you would like extra crispy crackling.
