Ingredients
- 3 tbsp coarse salt
- 2 stalks celery, roughly chopped
- 1 carrots,roughly chopped
- 1 large onion, rougly chopped
- 1.5 kg Pork belly

Cooking Instructions
- Pre-heat oven to 230°C or highest setting
- Slice skin side of pork belly into diamonds, being careful not to score to deep.
- Rub the meat side of the pork with the marinade (not the skin)
- Pat dry the pork skin with paper towel until completely dry and rub with coarse salt powder getting into the diamonds.
- Place in a large ovenproof dish and into oven for 30-35min until crackling is golden brown.
- Remove from oven and drop the temp to 150°C
- Place the carrots, onion, celery, garlic & apple under the pork belly.
- Add the verjuice and place back into the oven for 2-3 hours until very soft & tender.
- Put the grill on for the last 5 min if you would like extra crispy crackling.
