
Apple, Cabbage and Falafel Salad
Green pea falafels won’t disappoint. Filled with flavour and crunch, these falafels make a delicious addition to any salad.

Ingredients
- 1 cup chickpeas, drained and rinsed
- 3/4 cup fresh or frozen peas
- 1/2 red onion, chopped
- 2 garlic cloves
- 1 Tbsp lemon juice
- 1/4 cup parsley
- 11/2 tsp ground cumin
- 1/4 tsp chilli flakes
- 1 tsp salt
- 1/2 tsp freshly ground black pepper
- 1 tsp baking soda
- 2 Tbsp chickpea flour
- sunflower oil, for frying
- 2 baby green cabbages, sliced thinly
- 2 granny smith apples, sliced thinly
- 2 celery stalks, chopped thinly
- 120 g sugar snap peas, blanched
- 50 g flaked almonds, toasted
- caramelised cinnamon seed sprinkle
- For the Green Goddess Dressing:
- 1 avocado, mashed
- 1 garlic clove, crushed
- 1 lemon, juiced
- 4 Tbsp water
- 5 Tbsp white wine vinegar
- 4 Tbsp extra virgin olive oil
- 3 Tbsp Italian parsley, chopped
- 2 Tbsp chives, chopped
- 2 Tbsp basil, chopped
- salt, to season

Cooking Instructions
- Combine the chickpeas, peas, red onion, garlic, lemon juice, parsley, cumin, chilli flakes, salt, pepper, baking soda and chickpea flour in a food processor bowl. Pulse until well combined but not puréed. Adjust seasoning if necessary.
- Heat sunflower oil in a heavy-based pan and form the mixture into small patties.
- Fry the patties in batches without crowding the pan. Cook them for about 5 minutes on each side until golden brown.
- When cooked, remove the patties from the pan and place on some kitchen paper.
- Place all Green Goddess Dressing ingredients, except salt, into a blender or food processor and blend until smooth. Season to taste.
- Arrange salad ingredients on a platter and add the falafel, almonds, and dressing, sprinkle seeds.
