Green Butter Beans & Seed Tart
Green butter beans are already pretty great, but just taste what happens when you dress them up.

Ingredients
- 250 g breakfast seed mix
- 6 fresh dates
- 1 400 g can butter beans, drained and mashed
- 150 g Tenderstem™ broccoli
- 6-8 baby leeks
- 1 Tbsp olive oil
- Sea salt and freshly ground black pepper, to taste
- 250 g plain cream cheese tubs, at room temperature
- 100 g almonds toasted, roughly chopped

Cooking Instructions
- Place the seed mix in a bowl and keep aside.
- Place the dates on a chopping board and remove the pips. Chop the dates finely, mix into the seed mixture and drained beans until well combined and sticky.
- Press the seed mixture into the bottom of a 20 cm tart dish to form a base.
- Heat a grill pan until very hot. Brush the broccoli and leeks with some olive oil and chargrill until slightly softer.
- Add the cream cheese to the base and lay the Tenderstem® and leeks on top.
- Top with the chopped almonds and drizzle with some olive oil.
