Green Butter Beans & Seed Tart

Green butter beans are already pretty great, but just taste what happens when you dress them up.

Ingredients

  • 250 g breakfast seed mix
  • 6 fresh dates
  • 1 400 g can butter beans, drained and mashed
  • 150 g Tenderstem™ broccoli
  • 6-8 baby leeks
  • 1 Tbsp olive oil
  • Sea salt and freshly ground black pepper, to taste
  • 250 g plain cream cheese tubs, at room temperature
  • 100 g almonds toasted, roughly chopped

Cooking Instructions

  1. Place the seed mix in a bowl and keep aside.
  2. Place the dates on a chopping board and remove the pips. Chop the dates finely, mix into the seed mixture and drained beans until well combined and sticky.
  3. Press the seed mixture into the bottom of a 20 cm tart dish to form a base.
  4. Heat a grill pan until very hot. Brush the broccoli and leeks with some olive oil and chargrill until slightly softer.
  5. Add the cream cheese to the base and lay the Tenderstem® and leeks on top.
  6. Top with the chopped almonds and drizzle with some olive oil.
