Sweetcorn Fritter Salad

A fritter salad? Now that’s something the kids will enjoy as much as the adults.

  • sweetcorn, apple and fresh coriander fritters
  • 350 g baby marrow spaghetti
  • radishes, thinly sliced
  • 75 g red salad onions
  • creamy honey & mustard dressing
  • sunflower seeds, toasted for sprinkling

  1. Preheat oven to 180C. Place corn fritter on a baking tray, place in the oven for 5–10 minutes until heated through.
  2. Place the remaining ingredients in a large bowl and toss, making sure that the vegetables and well coated in the dressing.
  3. Arrange salad on a platter, top with heated fritters then garnish with sunflower seeds and serve.
