Sweetcorn Fritter Salad
A fritter salad? Now that’s something the kids will enjoy as much as the adults.

- sweetcorn, apple and fresh coriander fritters
- 350 g baby marrow spaghetti
- radishes, thinly sliced
- 75 g red salad onions
- creamy honey & mustard dressing
- sunflower seeds, toasted for sprinkling

- Preheat oven to 180C. Place corn fritter on a baking tray, place in the oven for 5–10 minutes until heated through.
- Place the remaining ingredients in a large bowl and toss, making sure that the vegetables and well coated in the dressing.
- Arrange salad on a platter, top with heated fritters then garnish with sunflower seeds and serve.
