Spice-roasted butternut

- 500 g butternut
- 3 Tbsp olive oil, to drizzle
- 2 tsp ground cumin
- 2 ml turmeric
- 2 tsp smoked paprika
- 1\4 tsp chilli powder
- A pinch salt
- 2 sprigs fresh rosemary, to garnish
- 1 fresh chillies,sliced

- Pre-heat the oven to 200°c.
- Halve the butternut then remove the seeds. Slice the butternut into large chunks/slices. (You can peel the butternut if you’d like but the roasted skin becomes soft and a little chewy when cooked.)
- Toss the butternut with the oil and all the spices, salt and rosemary then transfer to an oven-proof dish.
- Place in the oven and bake for 30-35 minutes until the butternut is cooked through and golden brown.
- Remove from the oven, garnish with fresh chilli and serve.
