Char-grilled chicken with chilli

Ingredients
- sour cream, to serve
- salt and freshly ground black pepper
- 1 lime, juiced
- coriander leaves
- 5 tbsp extra virgin olive oil
- 3 stalks spring onions, roughly chopped
- 2 green chillies, roughly chopped
- 1.2 kg skinless chicken thigh fillets
- 4 cobs sweetcorn, husks removed

Cooking Instructions
- Heat a grill pan over a high heat. Cook the corn, turning occasionally, for 10 minutes or until charred. Set aside.
- Thread the 3 chicken thighs onto skewers. Brush the chicken with half the oil and sprinkle with salt and pepper. Cook the chicken in batches for 5 minutes each side or until charred and cooked through.
- While the chicken is cooking, place the chilli, spring onion, coriander, lime juice, salt, pepper and remaining oil in a food processor and process until finely chopped.
- Cut the sweet corn kernels from the cobs, place in a large bowl with the chilli mixture and toss to combine.
- Serve the chicken with the corn salsa, sour cream and naan breads.
