Char-grilled chicken with chilli

Ingredients

  • sour cream, to serve
  • salt and freshly ground black pepper
  • 1 lime, juiced
  • coriander leaves
  • 5 tbsp extra virgin olive oil
  • 3 stalks spring onions, roughly chopped
  • 2 green chillies, roughly chopped
  • 1.2 kg skinless chicken thigh fillets
  • 4 cobs sweetcorn, husks removed

Cooking Instructions

  1. Heat a grill pan over a high heat. Cook the corn, turning occasionally, for 10 minutes or until charred. Set aside. 
  2. Thread the 3 chicken thighs onto skewers. Brush the chicken with half the oil and sprinkle with salt and pepper. Cook the chicken in batches for 5 minutes each side or until charred and cooked through. 
  3. While the chicken is cooking, place the chilli, spring onion, coriander, lime juice, salt, pepper and remaining oil in a food processor and process until finely chopped. 
  4. Cut the sweet corn kernels from the cobs, place in a large bowl with the chilli mixture and toss to combine.
  5. Serve the chicken with the corn salsa, sour cream and naan breads.
