Pork schnitzels

Ingredients
- 2 lemon, zest and juice
- approx. 500 g pork schnitzels
- 3 tbsp olive oil
- salt and freshly ground black pepper
- 4 tbsp Italian parsley , chopped
- 1 cup double thick cream
- 1/2 onion, finely chopped
- 1 tsp garlic, minced
- 50 g butter

Cooking Instructions
- Heat the butter in a large frying pan, then add the garlic and onion and sauté for 2 – 3 minutes until just softened.
- Add the lemon juice and zest and reduce to half.
- Add the cream and capers and cook for 5 minutes until the cream has thickened. Stir through the Italian parsley and season to taste.
- Heat another pan with the olive oil on a medium heat.
- Add the pork schnitzels and fry for about 5 minutes on each side or until golden brown and cooked through.
- Serve the warm schnitzels with the cream sauce poured over.
