Pork schnitzels

Ingredients

  • 2 lemon, zest and juice
  • approx. 500 g pork schnitzels
  • 3 tbsp olive oil
  • salt and freshly ground black pepper
  • 4 tbsp Italian parsley , chopped
  • 1 cup double thick cream
  • 1/2 onion, finely chopped
  • 1 tsp garlic, minced
  • 50 g butter

Cooking Instructions

  1. Heat the butter in a large frying pan, then add the garlic and onion and sauté for 2 – 3 minutes until just softened.
  2. Add the lemon juice and zest and reduce to half.
  3. Add the cream and capers and cook for 5 minutes until the cream has thickened. Stir through the Italian parsley and season to taste.
  4. Heat another pan with the olive oil on a medium heat.
  5. Add the pork schnitzels and fry for about 5 minutes on each side or until golden brown and cooked through.
  6. Serve the warm schnitzels with the cream sauce poured over.
