Chicken and chorizo tacos

Ingredients

  • 2 avocado, seeded and scooped
  • lime wedges, to serve
  • Sriracha Hot Chilli Sauce, to serve
  • 1/2 cup sour cream, plus extra to serve
  • 200 g rosa tomatoes, chopped
  • 500 g chicken mince
  • 8 tortilla wraps, warmed or toasted
  • sea salt and freshly ground pepper, to taste
  • coriander leaves
  • 1/2 tsp chilli flakes
  • 4 cloves garlic, crushed
  • 5 tbsp extra virgin olive oil
  • 225 g chorizo, case removed and chopped

Cooking Instructions

  1. Place the chorizo in a small food processor and process until finely chopped.
  2. Heat the oil in a large non-stick frying pan over a high heat. Add the chicken, chorizo, garlic, chilli, salt and pepper and cook, breaking up any lumps with a wooden spoon, for 12–15 minutes or until browned and cooked through.
  3. Divide the chicken mixture between the tortillas.
  4. Top with the avocado, tomatoes, sour cream and coriander.
  5. Serve with the chilli sauce, lime and extra sour cream.
