Ultimate chicken mayo sandwich
Ingredients
- 4 cheddar slices
- 4 Woolworths knotted rolls, sliced through the middle
- 12 strips streaky bacon
- 1 stalk celery, finely cubed
- 1 tsp Woolworths smoked chilli flakes
- 3 gherkins, finely chopped
- freshly ground black pepper to taste
- 3 stalks spring onions, roughly chopped
- 1 tsp dried thyme
- 200 g Woolworths onion marmalade
- 2 tbsp Dijon mustard
- 2 tbsp Tabasco sauce
- 4 heaped tbsp good quality mayonnaise
- 1/2 rotisserie chicken, shredded into large chunks

Cooking Instructions
- Chop pickles, spring onion and celery.
- Combine with mayo, Tabasco, Dijon mustard, onion marmalade, thyme, chilli flakes and pepper.
- Put the bacon in an oven tray and grill until crisp.
- Place the bacon onto toasted buns.
- Add the sliced cheddar.
- Pop back in the oven to let the cheese melt.
- Spoon over chicken mayo.
- Close with top buns.
