Freezer-friendly Thai curry
Ingredients
- 1 x 400 ml can coconut milk
- lime served on the side
- 1 kg frozen mashed potatoes, prepared as per instructions
- 100 g cashew nuts, toasted and roughly chopped
- 4 tbsp coriander, roughly chopped, extra for garnishing
- 1 tbsp fish sauce
- 250 g green vegetable medley
- 450 g frozen ready to cook prawns
- 80 g Thai green curry paste
- 3 tbsp canola oil

Cooking Instructions
- Heat the oil over a medium heat. Add the curry paste and cook for 2 minutes or until fragrant.
- Add the coconut milk and bring to a simmer.
- Add the frozen prawns and cook until the prawns are almost tender
- Add the frozen greens and cook for another 4 minutes
- Make the mashed potatoes as per package instructions
- Season the curry with fish sauce
- Garnish with the coriander and cashew nuts
- Serve over Woolies mashed potatoes and a twist and a lime on the side.
