Ingredients
- 500g ready-made puff pastry, thawed
- Butter
- 8 rashers streaky bacon, parcooked
- 1 fried Free-range egg, beaten
- balsamic crème

Cooking Instructions
- On a baking tray, place a rectangular stack of puff pastry and brush with melted butter.
- Place in a hot oven until puffed and golden.
- Pan-fry strips of streaky bacon until crispy.
- Top the pastry with the bacon and a golden fried egg and drizzle over some balsamic crème.
Cook's note:
Balsamic Creme from Modena (Italy) is made using a combination of concentrated grape must and aged balsamic vinegar. There's no cream in it, but it is reduced until it has a creamy consistency. Available from Italian delis.
