
Lamb Rib with my Favourite Potato Salad

Cooking Instructions
- 1,3kg free-range whole lamb rib, at room temperature
- 3 tbsp olive oil
- 500g baby potatoes
- 1/2 cup creme fraiche
- 1/2 cup mayonnaise
- 10g chives, chopped
- 125g streaky bacon
- salt to taste
- pepper to taste
METHOD:
- To prepare lamb ribs braai over medium coals, until cooked and crispy.
- To prepare the potato salad, toss baby potatoes with olive oil, roast at 180°C until tender, this should take 30-40 minutes.
- While those are cooking fry the bacon until crispy.
- When the potatoes have cooled cut them in half and toss together with crème fraîche, mayonnaise, crispy bacon, chives & season.
