Minestrone Soup

Ingredients
- 1 tsp Italian seasoning
- 500 g rosmarino pasta
- 1 cup spinach, chopped
- Parmigiano Reggiano (Parmesan), shavings to serve
- 1 can cannellini beans, drained and rinsed
- salt and pepper
- 1 x 800 can woolworths italian whole peeled tomatoes can, blended
- 3 cups chicken stock
- 2 garlic cloves, crushed
- 1 medium onion, chopped
- 2 sticks celery, thinly sliced
- 2 carrots, peeled and diced

Cooking Instructions
- Combine carrots, celery, onion and garlic in slow cooker.
- Pour in the stock and stir in tomatoes and salt, pepper and Italian seasoning.
- Cover and cook on low for 30 minutes
- Thirty minutes before serving, stir in pasta, spinach and beans.
- Cover, increase heat to high and cook until pasta is tender, about 15 minutes. Season with salt and pepper.
- Serve hot with crusty bread and Parmesan cheese, if desired.
