Apple and coconut crumble

Ingredients
- 125g butter, at room temperature
- 305ml White sugar
- 375ml flour
- 30 ml baking powder
- 375g fine dry coconut
- 3 x 400 g tins tinned pie apples
- 125ml sultanas
- 1 Tbsp custard powder

Cooking Instructions
- Pre-heat the oven to 180oC.
- Cream the butter and 125ml sugar until light and fluffy.
- Mix the flour, baking powder and coconut and add to the butter mixture. You should have a dry, crumbly mixture.
- Press 2/3 of this mixture into a pie dish and keep aside.
- Now make the filling. Heat the apples, 180ml sugar and sultanas with a little water in a pot.
- Mix the custard powder with a little water and mix in with the apples.
- Cook for 1 minute and let it cool.
- Spoon the pie filling into the prepared pie dish and top with the remaining 1/3 dry crumb mixture.
- Bake for 20 to 25 minutes and serve.
