Introducing the 2-ingredient ice-cream cake

This is not a scam: we bring you the 2-ingredient ice cream cake. Not only is it ridiculously easy to make, it’s cute, it’s delicious and it’s the perfect Valentine’s Day treat.

Easiest ever cake:

Add two cups of melted ice cream (Woolworths Red Berry Medley Frozen Yoghurt is delicious) to 1 ½ cups self raising flour and combine. Don’t overmix it – overmixing leads to dense, flat cakes. Add a dash of food colouring (optional). Spoon the batter into greased silicon mini bundt cake moulds (or cupcake papers), smooth to level and bake at 180°C for 20–30 minutes, or until lightly golden and spongy. Leave to cool before unmoulding, then drizzle with melted white chocolate and decorate with sprinkles.
