Kitchen Craft Episode 1: Making a soffritto
INGREDIENTS:
- 3T olive oil
- 2 large onions, finely diced
- 1 carrot, finely diced
- 1 stalk of celery, finely diced
- 2 bay leaves
- Salt and freshly ground black pepper
- 3 cloves of garlic finely diced
- 2T tomato paste
METHOD:
- Heat the oil over a medium heat.
- Add the veggies and bay leaves and season with salt and freshly ground black pepper before slowly cooking until cooked through and lightly caramelised.
- Add the garlic and cook for a minute before adding the tomato paste and cooking for about 5 minutes.
- Allow to cool or store in a glass jar with a lid on, keeping it in the fridge.
