Kitchen Craft Episode 1: Making a soffritto

INGREDIENTS:

  1. 3T olive oil
  2. 2 large onions, finely diced
  3. 1 carrot, finely diced
  4. 1 stalk of celery, finely diced
  5. 2 bay leaves
  6. Salt and freshly ground black pepper
  7. 3 cloves of garlic finely diced
  8. 2T tomato paste

METHOD:

  1. Heat the oil over a medium heat.
  2. Add the veggies and bay leaves and season with salt and freshly ground black pepper before slowly cooking until cooked through and lightly caramelised.
  3. Add the garlic and cook for a minute before adding the tomato paste and cooking for about 5 minutes.
  4. Allow to cool or store in a glass jar with a lid on, keeping it in the fridge.
